The squid (Loligo vulgaris) is the perfect cephalopod—the one every parent wants to give their children. It’s boneless and, if cooked correctly, very tender and tasty. It can be cooked in many ways, but the dish everyone loves is the battered and fried squid rings (it’s a very typical recipe in Catalan towns). We can often find squids accompanied with rice or sweaty onions, too.
A portion of 500 g (1,1 lb) of squid is perfect for 2 people.
We can clean them for you, but we teach you how if you want to learn!
Firstly, gently pull their arms and tentacles and extract them from the mantle. Then, separate the arms from the eyes and take the internal parts of the mantle off, including the gladius (the internal shell). A lot of people like to remove the skin, but it’s not necessary and it provides a lot of flavour.
