The small langoustine is the most famous crustacean with a hard shell on our coast.
500 g of langoustines are perfect for two people. For a main dish, 250 g per person. For a dish with other ingredients, like rice dishes, we recommend 80-100 g per person.
The langoustine is a decapod crustacean with an orange shell covering its body. It lives in mud seabeds and looks like a small lobster.
The langoustine is very versatile in the kitchen. It can be cooked in the oven, fried, boiled, steamed, stewed, in rice, etc.
While prawns have always appeared in old Catalan recipes, langoustines didn’t appear until the 20th century. Still, when its fishing began, it quickly became a popular product, and became part of plenty of Catalan dishes, like mar i muntanya, seafood casserole, pig’s trotter, escargots and many more.
